精進料理 Syojin Ryori at Nourish in Bath
Sozai Cookery School is delighted to welcome Master Tanahashi, from Japan, to Nourish Restaurant in Bath. He will share with us his mastery in the Japanese discipline of plant-based, Shojin Ryori cookery. He will show us how we can understand Zen through the food we prepare and eat. Be fascinated by the meditative process of grinding sesame seeds and enjoy Japanese tea & vegan treats.
Shojin is not simply a means of obtaining pleasure through eating: it is a rigorous discipline in which extended study leads one to an understanding of the profundities of Buddhism. Japan is extremely proud of this, one of its most precious forms of culture. Shojin is a novel food culture, based on the oldest form of food culture in Japan. It is a cuisine which goes beyond daily custom and is a concept which creates new experiences. The techniques behind this exciting cuisine will make your body happy, whilst offering respect and love for the soil and earth; this is the Shojin spirit.
The origin of Shojin started in Japan in the 6th century when Buddhism was brought to Japan from China. It became widespread with the development of Zen Buddhism from the 13th century onwards. Shojin is often explained as a form of traditional Zen vegetarian cooking, but Tanahashi’s style of shojin absolutely goes beyond this.
Master Tanahashi will offer a talk, a meditation practice and a Q&A session. We will also enjoy special Japanese Tea and vegan sweets.
This event promises to be fun, insightful and will be a great opportunity to get together and meet like-minded friends in an uplifting, relaxed environment.

Thank you, Master Suda and Sozai for a fascinating Japanese Cookery Lesson today.
The knife skills of Master Suda are amazing, as are his knives. His preparation of the sea eel was a work of art. It was wonderful just to see him at work, though I don't think I'll be trying this at home.
I found the tempura section very instructive. I have never seen, nor read, about making tempura this way before – sprinkling batter into the hot oil before frying the floured and battered vegetables. I think I will try at home now. The results look wonderful.
I really enjoy these sessions as they give an insight into "true" Japanese cookery and to the different styles and skills.
