Born in the Italian city of Lecce, I left behind a career in Taekwondo to hit London by storm with my culinary delights.

After attaining a first class diploma from the established Brindisi School of hospitality, I set about putting my skills to the trade.

I took inspiration from my mum - I used to love watching her make pasta from scratch; one minute a pile of dough, the next streams and streams of lovely spaghetti. My mamma always said "if you are going to do something to it properly" and I continue to live by that statement.
