Pressed and Crispy Roasted Marinated Sussex Leg of Lamb with Mint&Yogurt dressing and rosemary crusted new potatoes

Delicious lamb dish,where the boned and butterflied leg of lamb is marinated firstly in fresh oregano,rosemary and garlic for 24 hours. Then slowly roasted with a pressed tray on top of it for 2 hours,left with pressed tray overnight and then finally portioned and seared for perfect crispy,tender flavoursome finish. Served with roasted new potatoes,seasonal vegetables ,lamb jus and a yogurt & mint sauce.
