Hand havested red and golden beets cooked compressed and sliced . Bound together with amazing English goats cheese curd and then dusted with crushed pecan nuts

Proper beef wellington ,
800g of Prime Herefordshire English fillet smothered in English mustard , coated with truffled wild duxcelles wrapped with tarragon infused pancake covered in two layers of puff pastry . Served with a truffle and red wine jus .
