Shojin Kaiseki was originally a special kind of vegan dish prepared for
Buddhist monks, containing neither fish nor meat.
This follows the Buddhist prohibition against killing animals.
”Shojin" means "improving the soul."
It's very important to keep the harmony between the soul and nature.
